Ingredients

 15 g {1/2 oz) butter
 2 rashers streaky bacon, derinded and chopped
 Mushrooms50 Gram, sliced
 2 tomatoes, skinned and chopped
 Mustard1/2 Teaspoon, made
 Bread slice4 , buttered
 Cheddar Cheese50 Gram, sliced
 Parsley sprigs to garnish
 Salt To Taste
 Pepper To Taste

Directions

Melt the butter in a pan, add the bacon and fry until soft.
Add the mushrooms and tomatoes and cook for 1 minute.
Stir in the mustard and salt and pepper to taste.
Divide the mixture between 2 of the bread slices and top with the remaining 2 slices.
Toast both sides under a preheated hot grill until golden brown.
Place the cheese on top and return to the grill.
Cook until the cheese is golden and bubbling.
Garnish with parsley.
