Cheese Topped Cauliflower Recipe
Ingredients
1 medium head cauliflower
2 cups water
1/2 teaspoon salt
3/4 cup (3 ounces) shredded sharp Cheddar cheese
1/2 cup mayonnaise
1 tablespoon diced pimiento
2 teaspoons Dijon mustard
2 tablespoons sliced almonds, toasted
Directions
Remove outer leaves and stalk of cauliflower; wash.
Leave head whole.
Bring water and salt to a boil in a large saucepan; add cauliflower.
Cover and cook 10 to 12 minutes or until tender.
Drain cauliflower, and place in a serving dish; keep warm.
Combine cheese and next 3 ingredients in a heavy saucepan.
Cook over low heat, stirring constantly, until cheese melts.
Spoon mixture over cauliflower; sprinkle with almonds
