Directions

Sift the flour and seasonings together in a mixing bowl.
Add the butter in pieces and rub together with the fingertips until the mixture resembes fine breadcrumbs.
Stir in the grated cheese and the egg yolk.
Draw together with the fingertips to form a smooth dough, using a little cold water if the mixture is too dry.
Chill for at least 30 minutes.
Roll out the dough thinly on a floured board and cut into strips about 12.5 cm / 5 inches long and 5 mm / 1/4 inch wide.
Place on baking trays and bake in a preheated oven for 10-15 minutes or until golden.
Remove from the oven, allow to cool slightly, then transfer to a wire rack to cool completely.
Store in an airtight tin.
