Cheese Souffle Recipe
Even a bar of chocolate cannot lift my spirits as well as this Cheese Souffle. Use the freshest of Cheese available to get a flavorful Cheese Souffle. Ingredients
1-1/2 c milk
1/4 c powdered milk
3 t nutritional yeast
3 t wholewheat flour
1-1/2 t sea salt
4 eggs, separated
1/2 t thyme
1 c natural Swiss cheese, grated
1/2 c Parmesan cheese, grated
Directions
Heat 1 cup milk in double boiler until it simmers.
Meanwhile, in a blender mix the powdered milk, yeast, flour, and salt, with 1/2 c milk.
Combine the two mixtures, and simmer for 5 minutes, stirring constantly.
Remove from heat, cool slightly, then stir in beaten egg yolks, thyme and the cheeses.
Beat egg whites stiffly until shiny but not dry.
Stir in one-third of the egg whites, then fold in remaining whites.
Don't overmix; you should be able to see some of the whites.
Pour mixture into greased souffle dish, or casserole with vertical sides.
Run the tip of a spoon around the souffle an inch from the edge to make a slight depression.
Bake at 300 for 45-60 minutes.
Souffles are best right out of the oven, so have your guests seated and waiting.
