Cheese Souffle Recipe

Ingredients
6 eggs, separated
4 tablespoons butter
1 cup Swiss cheese, grated
3 tablespoons all-purpose flour
1 cup milk
1/2 teaspoon salt
White pepper
1/2 cup Cheddar cheese, grated
Directions
1. Preheat oven to 400°F. Grease a 2-quart souffle dish with 1 tablespoon butter and sprinkle bottom and sides with 1 tablespoon grated Swiss cheese.
2. Melt 3 tablespoons butter in a heavy saucepan over moderate heat. Stir in flour and cook over low heat for 1 minute.
3. Remove pan and pour in hot milk, beating until mixed with flour mixture. Add salt and pepper, reheat, and cook till mixture boils and thickens.
4. Remove from heat and beat in egg yolks, one at a time. Set aside and let cool.
5. Beat egg whites till stiff peaks form.
6. Stir grated cheeses into the sauce. Fold egg whites into mixture with a spatula.
7. Pour mixture into souffle dish and place in the middle of the oven. Turn heat to 375°F. Bake for 25 minutes till souffle puffs above rim of dish.
