Seasoned Cheese Souffle Recipe

Ingredients
1 ounce finely diced or grated cheese (Swiss, Parmesan or cheddar)
1/2 cup skim milk
1/2 slice bread, made into crumbs
1 egg, separated
Dash salt, cayenne, dry mustard or grated nutmeg
Directions
Combine cheese, skim milk and bread crumbs in small saucepan and heat slowly until cheese is melted.
Remove from heat and add slightly beaten egg yolk, salt, cayenne and mustard (or nutmeg).
Beat egg white until stiff.
Fold gently into cheese mixture.
Transfer to small casserole and bake about 30 minutes in 375° F. oven until puffy and well browned
