Directions

Sift the flour, salt, baking powder and mustard into a bowl.
Stir in the cheese.
Lightly beat the egg and milk together and add.
Mix well, knead for 1 minute.
Pat out the scone mixture on a floured work surface to a thickness of about 1 inch.
Stamp out 2-inch rounds, or cut out triangles, and put them on a baking sheet.
Bake in a preheated 425° oven for 12-15 minutes, until the scones are risen and golden.
Serve warm with butter.
