Cheese Quiche Recipe
|Butter||6 Tablespoon (1/2 cup plus 2 tablespoon)|

Cool slightly, then stir in 3 tbsp of the water and salt.
Sift self-rising flour into a bowl.
Slowly add butter mixture and mix until smooth.
Chill for 30 minutes.
Preheat the oven to 350°.
Peel and chop onions.
Melt remaining butter in a saucepan and fry onions for 10 minutes until soft.
Mix 1 tbsp flour and a little of the milk in a bowl, then add the rest of the milk and the remaining water.
Separate the eggs.
Mix the yolks into the flour and milk mixture.
Season with salt, pepper, nutmeg and a pinch of cayenne.
Beat egg whites till stiff, then fold into yolk mixture.
Roll out dough and use to line a greased 9 inch quiche or flan pan.
Spread onions over bottom of pastry case then sprinkle both sorts of cheese on top.
Cover with egg and milk mixture.
Bake for 15 minutes.
Reduce heat to 325° and bake for a further 45 minutes.
