Cheese Puff Balls Recipe
Ingredients
| Cheddar Cheese | 1/4 Cup (16 tbs), grated | |
| Flour | 4 Tablespoon | |
| Onion | 1/2 Teaspoon, grated | |
| Salt | 1/4 Teaspoon | |
| Cayenne | 1/8 Teaspoon | |
| 1 egg white, stiffly beaten | ||
| 3 tablespoons fine dry bread crumbs | ||
| Fat for deep frying | ||
Directions
1. Set a frying kettle on a warm part of the range. Fill it half full of fat or shortening. Let it slowly heat to 385° F., or hot enough to brown a 1-inch cube of bread in 1 minute.
2. Mix the cheese, flour, onion, salt and cayenne. Fold in the egg white. Shape into small balls. Roll in the bread crumbs.
3. Fry 1 to 2 minutes in the deep, hot fat. Remove with a slotted spoon or wire whisk. Drain on thick paper towels.
