Pizza Dough - 1, cut into discs (Recommend: Pillsbury Pizza Dough, Thin Crust)
 
Olive Oil - 3 tablespoons
 
Salt -1 teaspoon
 
Pepper - 1 teaspoon
 
Oregano - ½ teaspoon
 
Ricotta Cheese - 8 ounces, divided
 
Arugula - 4 ounces, divided
 
Prosciutto - 3 ounces, torn and divided
 
Parmesan Cheese, garnish

Directions

GETTING READY
1) Preheat grill to a medium heat.

MAKING
2) Roll out pizza dough to a thin layer and cut out round disks. (Depending on how big your cutter is, will depend on how many disks you get.)
3) In a bowl, combine olive oil, salt, pepper and oregano.
4) Spread the oil mixture on one side of the pizza disks.
5) Arrange the disks on the grill, oil side down, then oil the other side. Flip the pizza disks after 2 minutes and cook on the other side for another 2 minutes.
6) Take pizza disks off of the grill and turn the grill to a low heat.
7) Evenly top the disks with the ricotta cheese, arugula and prosciutto. Place pizza disks back on the grill, not on direct heat. And cook for another 5 minutes.

SERVING
8) Shred parmesan cheese over the top for garnish, and serve hot!

These little disks are the perfect appetizers for when you’re entertaining a small group. Prepared right from scratch, these do take a little effort, but are definitely going to be loved by all!
