Ingredients
1 package puff-pastry, frozen
Filling:
3/4 cup heavy cream
2 egg yolks
1 1/2 cups Swiss cheese, grated
1/2 tablespoon all-purpose flour
Salt
Paprika
Cayenne pepper
1 tablespoon brandy
For Brushing:
1 egg
Garnish:
Black olives
Directions
1. Roll out the thawed puff-pastry and line a pie pan with it. (Reserve some dough for the lattice-work.) Prick bottom with a fork. Bake in a 400°F oven for about 10 minutes and let it cool.
2. Filling: Whip the cream, add yolks, cheese, and flour. Season with salt, paprika, and Cayenne pepper and add the brandy.
3. Spread the filling on the pie crust.
4. Cut out strips from the dough and arrange like a lattice across the pie. Brush with egg.
