 Cheddar Cheese1/2 Cup (16 tbs), grated
 Parmesan cheese1/4 Cup (16 tbs), grated
 Egg whites2
 Oil2 Cup (16 tbs) (For frying)
 Additional grated Parmesan cheese, if desired

Directions

In a medium saucepan, heat butter or margarine and water to a rolling boil.
In a small bowl, combine flour, baking powder and salt.
Add to water mixture all at once.
Beat vigorously over low heat about 1 minute until mixture becomes smooth and leaves side of pan.
Remove from heat.
Beat in eggs, one at a time.
Continue to beat until mixture has lost its sheen.
Beat in Cheddar cheese and 1/4 cup Parmesan cheese.
In a medium bowl, beat egg whites until stiff but not dry.
Fold into cheese mixture.
Pour oil into a deep-fryer to depth recommended by manufacturer or pour oil 2 inches deep in a heavy medium saucepan.
Heat oil to 375°F (190°C).
At this temperature a 1-inch cube of bread will turn golden brown in 40 seconds.
Carefully drop heaping tea-spoonfuls of cheese mixture into hot oil.
Fry until puffy and golden, 40 to 50 seconds.
Use a slotted spoon to remove cooked fritters from hot oil; drain on paper towels.
Sprinkle with additional grated Parmesan cheese, if desired.
