Cheese Fondue With French Loaf Recipe

Ingredients

 
1 garlic clove, cut in half
 
8 fl. oz. dry white wine
 
1 teaspoon lemon juice
 
8 oz. Gruyere cheese, cut into small cubes
 
8 oz. Emmenthal cheese, cut into small cubes
 
2 teaspoons cornflour , dissolved in 1 tablespoon wine
 
1/4 teaspoon black pepper
 
1/8 teaspoon cayenne pepper
 
2 tablespoons kirsch
 
1 long thin French loaf {baguette), cut into quarters, lengthways, then into 1 inch slices, crosswise

Directions

Rub the garlic halves around a saucepan and discard.
Pour the wine and lemon juice into the pan and place it over low heat.
When the liquid is hot, add the cheese cubes and stir until they melt and the mixture is blended.
Add the cornflour [cornstarch] mixture, pepper and cayenne and cook, stirring constantly, for 2 minutes, or until the mixture thickens.
Do not allow to boil.
Stir in the kirsch and beat for 1 minute.
Then pour the cheese mixture into the fondue pot.
Light the spirit burner and place the fondue pot over the heat.
The fondue is now ready to serve with the bread.
