1/4 pound Monterey jack or pepper jack cheese
 
1 medium onion
 
1 pound ground round
 
2 tablespoons Worcestershire or steak sauce
 
1 teaspoon coarsely cracked pepper
 
1/2 teaspoon salt

Directions

1 Grate the cheese. Finely chop the onion.
2 In a medium bowl, combine the beef, onion, Worcestershire sauce, 1/4 teaspoon of the pepper and the salt and mix gently. Divide the hamburger mixture into 4 equal portions.
3 Flatten each portion of hamburger into a patty and press one- fourth of the cheese into the center.
4 Pull the sides of the hamburger patty up and over the cheese to completely enclose it. Gently reform into a flat patty, making sure the cheese does not poke out.
5 Sprinkle the hamburger patties with the remaining pepper, pressing it gently into the meat.
6 In a large skillet, preferably nonstick, cook the hamburgers over medium-high heat until done: 3 minutes per side for medium-rare, 4 minutes per side for medium, and 5 minutes per side for well-done.
