Cheese Enchiladas Recipe
Ingredients
| Onion | 1/4 Cup (16 tbs), chopped | |
| Butter/Margarine | 1 Tablespoon | |
| Cottage cheese | 2 Cup (16 tbs) | |
| White cheddar cheese | 1 pound, shredded | |
| Corn chips | 1/4 Cup (16 tbs), crushed | |
| Stuffed olives | 2 Tablespoon, chopped | |
| 2 tablespoons chopped jalapeno chilies | ||
| Salt | 1 Teaspoon | |
| Tortillas | 12 | |
| Green Enchilada Sauce | ||
Directions
Cook onion in butter until tender.
Add cheeses, corn chips, olives, chilies, and salt.
Fry tortillas in oil until soft and pliable but not crisp.
Drain; center cheese filling in each tortilla and roll.
Place in greased shallow baking dish, seam side down.
Add Green Enchilada Sauce.
