Directions

1. Blend water and pancake mix to form a paste. Coarsely grate cheese (do not use the stuff in the green can). Mix cheese and paste together with hands. Add any spices you like such as cumin, garlic, chives or none at all. Do not use salt. Take about 1 tablespoon of mixture and form a patty in palm of hand. Form approx. 10 patties.
2. Place non-stick skillet on medium high heat, lightly coat with vegetable oil. Garlic flavored "PAM" spray works well. Place 3 to 5 of the patties in the skillet. Using a spatula push edges inward to shape. When slightly browned (about 1 minute) carefully flip each patty. Flatten with spatula. Brown again. This technique requires some practice. The darker brown, the more crispy the "cracker". Flip as many times as needed to desired color. For a crispier "cracker" eliminate the pancake mix and water.
3. Remove from skillet and place on paper towel to soak up excess oils.
4. Repeat until all patties are cooked. Serve as is or top them with a spread.
