Ingredients
Lasagna noodles 9 layers
Butter 1/2 cup
Onion 1
Garlic 1 clove
All purpose flour 1/2 cup
Salt 1 tsp
Chicken broth 2 cups
Milk 1 1/2 cups
Mozzarella cheese 4 cups
Parmesan cheese 1 cup
Basil 1 tsp
Oregano 1 tsp
Ground black pepper 1/2 tsp
Ricotta cheese 2 cups
Cooked chicken 2 cups
Spinach 600 gms
Parsley 1 tbsp
Parmesan cheese 1/4 cup
Directions
Preheat oven to 350° F.
Cook the lasagna noodles in salted boiling water for 8 to 10 minutes as per the packet.
Drain the lasagna, rinse with cold water and keep aside to cool.
In a large saucepan, heat the butter and saute the onion, garlic & spinach.
Stir in the flour and salt, and simmer until bubbly.
Mix in the broth and milk, and boil, stirring constantly for 1 minute.
Now add in the 2 cups mozzarella cheese and 1/2 cup Parmesan cheese stirring continuously.
Season with the basil, oregano, and ground black pepper.
Remove from heat, and set aside.
Spread 1/3 of the sauce mixture in the bottom of a 9x13 inch baking dish.
Spread 1/3 of the lasagna noodles, the ricotta, and the chicken.
Arrange 1/3 of the noodles over the chicken, and layer with 1/3 of the sauce mixture with spinach, and the remaining 2 cups mozzarella cheese and 1/3 cup Parmesan cheese.
Layer remaining lasagna noodles over cheese, and spread remaining sauce evenly over noodles.
Sprinkle with parsley and 1/4 cup Parmesan cheese.
Bake 35 to 40 minutes in the preheated oven.
