Cheese Broiled Eggplant Recipe
Ingredients
2 small eggplants
2 tbsp olive oil
1/4 cup tomato sauce
Salt and pepper
1 cup Mozza rella cheese, grated
Directions
Preheat oven to broil.
Slice eggplants in half lengthwise.
If needed, cut a thin slice from the rounded side of eggplant halves to prevent rolling.
In a saucepan filled with lightly salted boiling water, blanch eggplant 6 minutes.
Remove from saucepan.
Rinse under running cold water.
Drain.
On an ovenproof baking sheet, place eggplant halves.
Brush with oil.
Spoon equal amounts of tomato sauce over each.
Season with salt and pepper.
Top with grated cheese.
