Cheese Beignets Recipe
Ingredients
| Water | 1/2 Cup (16 tbs) | |
| Butter | 3 Tablespoon | |
| All purpose flour | 1/2 Cup (16 tbs) | |
| Eggs | 2 | |
| 4 tablespoons grated Parmesan, Swiss, or sharp Cheddar cheese | ||
| Salt | 1 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| 1 egg white, stiffly beaten | ||
| Fat for deep frying | ||
Directions
Combine water and butter in saucepan and bring to a boil.
Remove from heat.
Add flour, all at once.
Beat until glossy and dough clears sides of pan.
Beat in eggs, one at a time, beating well after each addition.
Add cheese, salt, and pepper.
Fold in beaten egg white.
Drop from teaspoon into hot deep fat (365°F. on frying thermometer).
Brown on all sides.
Remove from fat and drain on paper towel.
Serve very hot.
Excellent with drinks, soups, or salads.
Makes about 3 dozen small beignets.
