Cheese Apple Flan Recipe

| 450g/1lb cooking apples | ||
| 50g/2 oz soft brown sugar | ||
| 75g/3 oz Cheshire cheese | ||

Roll out three-quarters of the pastry and use it to line a 23-cm/9-in flan ring.
