Cheese And Vegetable Soup Recipe
Ingredients
1 cup chicken broth
1/2 cup chopped peeled potato
1/4 cup chopped celery
1/4 cup chopped carrot
1/4 cup chopped green or sweet red pepper
1 cup skim milk
2 tablespoons all purpose flour
1/4 cup shredded American cheese
Dash ground nutmeg
Directions
In a medium saucepan combine chicken broth, potato, celery, carrot, and green or sweet red pepper.
Bring to boiling; reduce heat.
Cover and simmer for 10 to 12 minutes or till vegetables are tender.
In a small bowl stir together milk and flour; stir into saucepan.
Cook and stir till thickened and bubbly.
Cook and stir for 1 minute more.
Stir in cheese till melted; stir in nutmeg.
