8 thick slices soft white bread
Butter or margarine, softened
3 tablespoons all-purpose flour
1 cup milk
1/2 teaspoon Worcestershire
1 8-ounce package American cheese slices, diced
1 10-ounce package frozen peas and carrots or mixed vegetables
Diced pimento for garnish
Directions
1. Prepare toast cups: Preheat oven to 375°F. Spread 1 side of each bread slice with butter or margarine. Gently push a slice, buttered side down, into each of eight 6-ounce custard cups. Bake 10 minutes or until bread is browned; remove from custard cups.
2. Meanwhile, prepare cheese-and-vegetable mixture: In 3-quart saucepan over medium heat, melt 2 tablespoons butter or margarine (1/4 stick). Stir in flour until blended; cook 1 minute. Gradually stir in milk and Worcestershire; cook, stirring constantly, until mixture thickens. Stir in cheese and frozen vegetables; cook until cheese melts and vegetables are heated through.
3. For each serving, place 2 toast cups on a dinner plate; spoon some cheese-and-vegetable mixture into cups. Garnish filled cups with diced pimento.
