Cheese And Shrimp Alexandria Recipe
Ingredients
3 tablespoons butter
3 tablespoons chopped green pepper
2 tablespoons chopped onion
2 tablespoons flour
1/2 teaspoon salt
1/2 teaspoon sugar
Dash Tabasco
1 cup canned tomatoes
1 1/2 cups shredded sharp Cheddar cheese
1 egg, beaten slightly
1/4 cup undiluted evaporated milk
1 cup cooked shrimp
Hot cooked rice
Directions
Heat butter in blazer pan over moderate heat.
Add green pepper and onion and cook a few minutes.
Stir in flour and let bubble.
Add seasonings and place over boiling water in pan.
Slowly stir in tomatoes and cook, stirring occasionally until mixture thickens.
Add cheese and stir until cheese melts.
Mix egg with evaporated milk and stir into cheese mixture.
Continue cooking for a few minutes longer.
Add shrimp.
When hot, serve over rice.
