Cheese And Salmon Souffle Recipe
Ingredients
| Butter | 1 Ounce | |
| Flour | 1 Ounce | |
| Cheese | 2 Ounce, grated | |
| Eggs | 3 | |
| 4 oz flaked cooked salmon or 1 small tin of salmon | ||
| Milk | 1/4 Pint | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Melt the butter, stir in the flour, and work in the milk.
Bring to boiling point, stirring until thick.
Season the sauce.
Pour half over the salmon and mix well.
Spread this mixture into a shallow fireproof dish.
Into the remaining half of the sauce blend the grated cheese and the yolks of the 3 eggs, one at a time.
Beat well.
Whisk 3 whites stiffly and fold into this mixture.
Spread over the salmon and bake in a hot oven for about 15-20 minutes.
