2 1/2 cups all purpose flour

3/4 cup (3 ounces) shredded sharp Cheddar cheese
1/4 cup finely chopped onion
3 tablespoons finely chopped green pepper
1 (2 ounce) jar diced pimiento, drained
2 eggs, beaten
1 1/2 cups milk
1/4 cup vegetable oil
Directions
Combine first 10 ingredients in a large bowl; make a well in center of mixture.
Combine eggs, milk, and oil; add to dry ingredients, stirring just until moistened.
Spoon into greased muffin pans, filling two thirds full.
Bake at 400° for 20 to 25 minutes.
Remove from pans immediately
