The much desired Cheese And Onion Soup can now be a part of your meal. While in college, I once saw my roomie making this unusually tasty dish. I couldn€™t believe that it was made out of such easy ingredients at first. Sauteed onions with sprinkled black peppers, layered with cream and tobasco was the perfect evening filler. Some whipped cream and herbs to garnish can give Cheese And Onion soup an interesting look. If you dont wanna spend those extra pennies in eating out, this cheesy recipe is perfect.

Ingredients

 
1-1/2 cups minced onion
 
4 tablespoons butter
 
3 tablespoons unbleached flour
 
1/2 teaspoon seasoned salt
 
Pinch cayenne pepper
 
1/4 teaspoon black pepper
 
1/2 teaspoon paprika
 
1/4 teaspoon ground sage
 
3 cups milk
 
1 cup half-and-half cream
 
2 cups freshly shredded sharp Cheddar cheese
 
1/2 teaspoon Worcestershire sauce
 
3 drops Tabasco sauce
 
3 tablespoons minced fresh parsley
 
Whipped cream
 
Minced fresh chives

Directions

Saute onion in butter until soft.
Add flour and seasonings, cook, stirring, 3 minutes and gradually add milk and cream.
Cook and stir until smooth and thickened.
Add cheese and stir until melted.
Season with Worcestershire, Tabasco and parsley, and adjust to taste.
Garnish with dollops of whipped cream and sprinkle with chives.
