Ingredients

 100 g/4 oz shortcrust pastry

 150 ml / 1/4 pint milk
 100 g/4 oz cheese, grated
 225 g/8 oz kipper fillets, flaked
 Pepper1

Directions

Roll out the dough and use to line a 20 cm/8 inch flan tin.
Beat together the eggs and milk, then mix in the cheese, kippers and pepper.
Pour into the flan case and bake in a preheated moderate oven (180 C/350 F, Gas Mark 4) for 45 minutes or until the filling is set and golden brown.
