Ingredients
4 eggs
1 oz. butter
1 oz. flour scant
1/2 pint milk
8 oz. grated Cheddar cheese
8 oz. sliced cooked green beans
4-6 oz. rice
Directions
Put rice into boiling salted water and cook for 15-20 minutes (until tender).
Meanwhile hard boil the eggs.
Shell the eggs.
Cut into 8 lengthwise.
Melt the butter in small saucepan.
Stir in the flour and cook gently for 1 minute.
Add the milk a little at a time, stirring constantly until the sauce is creamy and has thickened.
Remove from heat, add 6 oz.
grated cheese, half the sliced green beans and the hard boiled eggs.
Stir gently until the eggs have heated through.
Pour into a ring of well drained rice.
Arrange rest of beans round rice.
Sprinkle with remaining cheese.
