Cheese And Corn Meal Loaf Recipe
Ingredients
| Corn meal | 1 Cup (16 tbs) | |
| Cheddar cheese | 1⁄2 Pound, cubed | |
| Milk | 1 Cup (16 tbs) | |
| Boiling water | 2 Cup (32 tbs) | |
| Flour | 1 | |
| Salt | 1 Teaspoon | |
| Shortening | 1⁄2 Cup (8 tbs) |
Directions
Combine corn meal and milk in a saucepan.
Add boiling water and cook over a moderate heat, stirring constantly, until thick.
Reduce heat, cover, and cook over a low heat for 10 minutes.
Stir occasionally.
Remove from heat.
Add salt and cheese, stirring until cheese melts.
Spoon into a loaf pan and cool.
When cold and solid, turn out of pan and cut into slices about 3/4 inch thick.
Dust slices lightly with flour and fry in heated shortening until crisp and golden on both sides.
