| 155 g/5 oz cooked or canned black or black-eyed beans, drained | ||
| 60 g/2 oz grated mozzarella cheese | ||
| Cheddar Cheese | 60 Gram, grated | |
| 2 tablespoons hot chilli sauce | ||
| Flour tortillas | 12 , warmed | |
| Egg white | 1 | |

Directions
1. Place beans, mozzarella cheese, tasty cheese (mature Cheddar) and chilli sauce in a bowl and mix to combine.
2. Place 2 tablespoons of mixture on one-half of each tortilla. Brush edges with egg white and fold to enclose filling. Press edges together firmly to seal.
3. Brush quesadillas with a little oil and cook in a preheated dry frying pan over a medium heat for 2 minutes each side or until puffed and golden.
