 Potatoes4 Large
 225 g / 8 oz bacon, diced
 Onions2 Small, finely chopped
 75 ml / 3 fl oz sunflower oil
 125 g / 4 oz Gruyere cheese, grated
 Breadcrumbs60 Milliliter
 Salt To Taste
 Pepper To Taste

Directions

MAKING
1)Place potatoes in hot oven and bake.
2)In a bowl mix onion and bacon.
3)In a frying pan, heat oil and saute bacon and onion mixture for 5 minutes.
4)Drain away liquid and cook for 5 minutes over high heat. Bacon will turn crisp.
5)Into a bowl, separate flesh from baked potatoes after cutting them in half.
6)Mash and mix well with bacon and onion mixture. Season with salt and pepper.
7)Add and mix in cheese and pile the potato skins with the mash mixture.
8)Remaining cheese is mixed with breadcrumbs and spread on top of the potatoes.
9)Grill under preheated grill until golden in color.

SERVING
10)Serve piping hot.
