Cheddar Cheesecake With Strawberries Recipe
Ingredients
| Vanilla wafer crumbs | 1 1⁄4 Cup (20 tbs) | |
| Butter/Margarine | 2 Tablespoon, melted | |
| Cream cheese | 16 Ounce, softened (Two 8 Ounce Package) | |
| Shredded sharp cheddar cheese | 1⁄2 Cup (8 tbs) | |
| Sugar | 3⁄4 Cup (12 tbs) | |
| Eggs | 3 | |
| Grated orange peel | 1⁄2 Teaspoon | |
| Grated lemon peel | 1⁄4 Teaspoon | |
| Flour | 2 Tablespoon | |
| Heavy cream | 1 Cup (16 tbs) | |
| California strawberries | 1 Pint | |
| Light corn syrup | 1⁄2 |
Directions
Mix crumbs with butter; press over bottom of 9" springform pan.
Bake in 350 degree (moderate) oven 5 minutes.
Combine the cheeses and sugar in bowl; beat until fluffy.
Beat in eggs, 1 at a time.
Blend in peels, flour and 1/2.cup of the cream.
Pour over crumb crust in pan.
Bake at 350 degrees for 40 minutes, until the cake is set in center.
Cool on rack.
Arrange the whole strawberries on top of the cake.
Brush with corn syrup.
Whip remaining cream until stiff; then, using a pastry tube, pipe in a border around the strawberries.
