Cheddar Cheese Soup Recipe
Ingredients
Butter or margarine - 4 tablespoons
Onion - 1/4 cup, finely chopped
Green pepper - 1/2 cup, finely chopped
Carrot - 1/2 cup, finely chopped
Flour - 5 tablespoons
Condensed chicken broth - 3 cans (10 1/2 oz), undiluted
Sharp natural Cheddar cheese - 3 cups, grated
Milk - 3/4 lb (2 cups) milk
Pepper - a dash
Salt - 1/4 teaspoon
Croutons (optional) - 1/2 cup
Parsley - chopped, to garnish
Directions
GETTING READY
1) Arrange the ingredients.
MAKING
2) In 3-quart saucepan, heat the butter or margarine and cook onion, green pepper, and carrot 10 minutes, stirring occasionally.
3) Remove from heat; stir in flour, and mix well.
4) Cook one minute, stirring constantly.
5) Stir in chicken broth to vegetable mixture.
6) Boil the mixture, stirring constantly.
7)Slowly stir in cheese; cook, over medium heat and stirring, until cheese has melted.
8) Then add milk.
9) Season with salt and pepper.
10) Bring the mixture just to boiling, but do not boil.
SERVING
11) Serve the soup hot with croutons, and sprinkle with the parsley.
