Cheddar Cheese Muffins With Apple Butter Recipe
Simple cheddar cheese muffins with apple butter is a twist on the classic cheese muffins recipe. Bake up the easy muffins and serve them with a warm and flavorful apple butter dip. the dip made with apple jelly, cinnamon and butter is really yummy.
Ingredients
2 cups all-purpose flour 500 mL
1/2 cup granulated sugar 125 mL
1 tbsp baking powder 15 mL
1/2 tsp salt 2mL
1/2 tsp baking soda 2mL
2 cups grated Cheddar cheese 500 mL
1 cup plain yogurt 250 mL
1/4 cup butter or margarine,melted 50 mL
2 eggs, beaten
APPLE BI UTTER:
1/2 cup softened butter 125 mL
1/2 cup apple jelly 125 mL
1/4 tsp cinnamon l mL
Directions
In a large bowl, combine flour, sugar, baking powder, salt and baking soda.
Stir in cheese, mixing well.
Make a well in the center.
In another bowl, whisk together yogurt, butter and eggs.
Add quickly to dry ingredients, stirring just until blended and lumpy.
Spoon batter into prepared muffin tin, filling to the top.
Bake in preheated oven for 18 to 20 minutes or until golden brown.
Meanwhile, prepare Apple Butter.
In a bowl beat butter until creamy.
Add jelly and cinnamon, blending well.
Serve with warm muffins.
