Ingredients

 Lean bacon slice4
 All purpose flour1/4 Cup (16 tbs), unbleached
 Baking powder4 Teaspoon
 Salt1/2 Teaspoon
 Shortening1/2 Cup (16 tbs)
 1/2 cup shredded Cheddar cheese, preferably old 125 mL
 Milk1 Cup (16 tbs)
 All purpose flour
 Egg yolk1 (Glaze:)
 1/4 cup shredded 50 mL Cheddar cheese, preferably old

Directions

Fry bacon until crisp; drain well on paper towel; crumble and set aside.
In large mixing bowl, combine flour, baking powder and salt.
With pastry blender or 2 knives, cut in shortening until mixture is crumbly.
Stir in cheese and bacon; gradually pour in milk, stirring with fork to make soft dough.
Add more milk, if necessary, to moisten all dry ingredients.
Turn out dough onto floured work surface and knead 8 to 10 times.
Roll out into 8 inch (20 cm) square; cut in half, then cut each half into 6 finger shaped biscuits.
Transfer to baking sheet lightly dusted with flour.
Glaze: Brush biscuits with egg yolk and sprinkle with cheese.
Bake in 450°F (230°C) oven for 10 to 15 minutes or until golden brown.
