Ingredients
| Lean bacon slice | 4 | |
| All purpose flour | 1/4 Cup (16 tbs), unbleached | |
| Baking powder | 4 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Shortening | 1/2 Cup (16 tbs) | |
| 1/2 cup shredded Cheddar cheese, preferably old 125 mL | ||
| Milk | 1 Cup (16 tbs) | |
| All purpose flour | ||
| Egg yolk | 1 (Glaze:) | |
| 1/4 cup shredded 50 mL Cheddar cheese, preferably old | ||
Directions
Fry bacon until crisp; drain well on paper towel; crumble and set aside.
In large mixing bowl, combine flour, baking powder and salt.
With pastry blender or 2 knives, cut in shortening until mixture is crumbly.
Stir in cheese and bacon; gradually pour in milk, stirring with fork to make soft dough.
Add more milk, if necessary, to moisten all dry ingredients.
Turn out dough onto floured work surface and knead 8 to 10 times.
Roll out into 8 inch (20 cm) square; cut in half, then cut each half into 6 finger shaped biscuits.
Transfer to baking sheet lightly dusted with flour.
Glaze: Brush biscuits with egg yolk and sprinkle with cheese.
