Cheddar Brunch Muffins Recipe
Cheddar brunch muffins are simple cheddar cheese muffins baked with flour milk and sugar. These muffins are light yet filling without being too high on the calories. A perfect brunch accompaniment.
Ingredients
2 cups all-purpose flour 500 mL
2 tbsp granulated sugar 25 mL
2 1/2 tsp baking powder 12 mL
1/2 tsp salt 2mL
11/2 cups shredded Cheddar cheese 375 mL
1 egg
1 cup milk 250 mL
1/4 cup melted butter 50 mL
Directions
In a large bowl, sift together flour, sugar, baking powder and salt.
Fold in cheese, making sure to coat well with flour.
Add unbeaten egg, milk and butter, stirring quickly just until blended.
Do not overmix.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Bake in preheated oven for 20 to 30 minutes.
HINT: A dull knife works much better than a sharp one for slicing cheese.
