Cheddar Muffins Recipe
Ingredients
| All purpose flour | 1 Cup (16 tbs) | |
| Granulated Sugar | 1 Tablespoon | |
| 2 teaspoons double-acting baking powder | ||
| Cheddar Cheese | 5 Ounce, shredded | |
| Skim milk | 1/2 Cup (16 tbs) | |
| Egg | 1 | |
| 2 tablespoons unsalted margarine, melted | ||
Directions
1. Preheat oven to 400°F. Line a 6-cup muffin pan (2 1/2-inch-diameter cups) with paper baking cups and set aside.
2. In bowl combine flour, sugar, and baking powder; stir in cheese until coated with flour mixture.
3. In 1-cup measure combine milk, egg, and margarine; pour into dry ingredients and, using a fork, stir until all ingredients are moist (mixture will be thick and lumpy).
4. Divide batter into paper baking cups (each will be about 2/3 full); bake for 15 minutes (until muffins are golden brown). Transfer muffins to wire rack to cool.
