2 cups (500 ml) extra strong Cheddar cheese, cubed
 
Marinade
 
1/2 cup (125 ml) red wine
 
1/2 cup (125 ml) port
 
2 tsp (10 ml) sesame seeds
 
1 French (dry) shallot, chopped

Directions

–  Place cheese cubes in a bowl and set aside.
–  In a separate bowl, combine marinade ingredients. Pour over cheese cubes and marinate for 12 hours to
4 days. Drain and pat dry before serving.
