Place flour, wheat germ and salt in a bowl and mix well.
Work in the butter with the fingertips or a pastry blender until mixture is like coarse oatmeal.
Stir in cheese, walnuts, egg yolk and enough water to make a dough.
Knead briefly to distribute liquid.
Roll out on a lightly floured board to 1/8-inch thickness and cut into triangles.
Place on a lightly greased baking sheet and bake in preheated oven 12 to 15 minutes or until lightly browned.
Cool on a rack and store in an airtight container.
