Ingredients
4 slices rye bread with caraway seeds, cut into 1 -inch cubes
1 1/2 cups shredded low-fat Cheddarcheese(6 ounces)
1 cup skim milk
3 green onions, including tops, chopped
2 large eggs
2 large egg whites
1 tablespoon Dijon mustard
1/8 teaspoon ground red pepper (cayenne), or to taste
Directions
1 Preheat the oven to 350° F.
Grease a 1 1/2 quart bakingdish.
In a large bowl, combine the bread cubes, cheese, milk, green onions, eggs, egg whites, mustard, and red pepper.
2 Pour the mixture into the baking dish, cover, and place in a larger baking dish or pan; add enough hot water to come halfway up the sides.
Bake for 45 minutes, then un-coverand bake 30 minutes longer or until a knife inserted in the center comes out clean.
