Chayote-Guacamole Snack Recipe

Chayote-Guacamole Snack is my snack favorite. I tasted Chayote-Guacamole Snack first at my friend's home. It was so good I had to learn how to make it at home. Yum, yum, yummy!

Ingredients

1 small Chayote
1 large ripe avocado, peeled, seeded and mashed
1/2 cup (120 ml) onion, chopped
1/2 cup (120 ml) sharp cheddar cheese, shredded
1 medium tomato, chopped
2 Fresh Serrano or Jalap eno Chiles, seeded and chopped
1/2 tsp (3 ml) salt
1/4 tsp (1 ml) hot pepper sauce
1/4 tsp (1 ml) ground black pepper
16 crisp tortilla chips
1/2-3/4 cup (120-180 ml) sharp cheddar cheese, shredded vegetable dippers and tortilla chips for dipping fresh cilantro, optional

How to make Chayote-Guacamole Snack

Quarter chayote; cook in a small amount of boiling water for about 15-20 minutes, or until very tender.
Remove seed and peel; chop into blender or food processor bowl.
Add avocado and blend until pureed.
Add onion, 1/2 cup cheese, tomato, chiles and seasonings; blend for 5 seconds or just until mixed.
Taste for seasoning.
Line a 1 -quart shallow casserole dish or pie plate with tortilla chips; spoon guacamole mixture over chips.
Top with remaining cheese as desired.
Place dish in a 350°F (180°C) oven for about 10 minutes or until cheese melts and bubbles.
