Ingredients

 Tiger prawns4 Large
 Shiitake mushrooms4 Large
 Spring onion - 1 stalk
 Eggs4
 Water1 Cup (16 tbs)
 Light soy sauce
 Pepper white1 To taste
 Rock Salt To Taste

Directions

GETTING READY
1) Remove the shell, devein and clean the prawns.
2) Thinly slice the mushrooms and finely chop the spring onions.
3) Keep ready 4 individual cups, bowls or ramekins.

MAKING
4) Whisk eggs, add water and a dash of soy sauce and pepper.
5) Ladle egg mixture in cups and put mushroom slices and a prawn into each.
6) Cook for steaming for 20 minutes.

SERVING
7) Scatter on top with spring onions and serve with a small turn of the rock salt grinder.
