Directions
1)In Water add both the food color separately.
2)Add rava and heated ghee to the maida and mix well, then add the colored water and make a dough.
3)Repeat step 2 for the second colored dough using same proportions.
4)Keep the rounds of dough covered with slightly wet(damp) cloth.
To make pithi:
5)In a pan add ghee once it melts add wheat flour and khus khus and roast it for sometime. 6
6)Add coconut and roast for 10 minutes. Turn off the heat and add cardamom powder , sugar, pistachio powder and cashew powder while the mixture is still warm, mix it well. Let the pithi cool down completely.
Steps to making the Chatai/ design: (Keep 2 empty large plates ready on the side to keep the strips on.)
7)Roll the orange colored ball of dough out into a large puri then cut strips of the puri. .
8)Pick each orange strip gently and place it apart from each other on an empty plate.
9)Roll out the next green colored ball of dough into a large puri and follow the above steps.
10)Now one at a time, take each orange strip and place next to each other horizontally and place the green strip vertically.
11)From the right side pick up the next orange horizontal strip from the right side all the way to first green strip and let it go over the green(vertical)orange strip and place both strips down.
12)Next take another orange strip and place its tip under the first orange strip next to the previous green strip(with almost no gap in between).
13)This time again pick up every alternate orange strip to go over the green strip and make sure to see there is a weave of orange and green crossed colors on every row.
14)Give it a chatai shape and pick up with a flat spoon and place it in a diamond shape on the board.
15)Gently push the woven pattern of orange and green strips close towards the center (without disturbing the weaves but at the same time bring the woven chatai close together and close all the gaps and holes(to avoid pithi from falling out later).
16)Fill the chatai-patterned diamond-shaped chatai with pithi.Seal the edges by wetting them with milk-water mixture and go around with katni to make the kanavla as usual.
17)Fry it as usual on very low heat to maintain the colors.
