Ingredients

 
1 cup milk
 
1 cup sugar
 
4 egg yolks
 
1 envelope unflavored gelatin
 
3 tbsp cold water
 
1/2 tsp vanilla or other extract
 
1 cup whipped cream

Directions

In a saucepan, bring milk and half the sugar to a boil.
In a bowl, beat egg yolks with remaining sugar.
Add boiling milk.
Return to pan, over heat.
With a wooden spatula, stir until cream thickens.
Do not let boil.
Meanwhile, in a bowl, let gelatin foam in cold water.
Add to cream.
Let cool.
For quicker results, dip bottom of saucepan in a bowl of ice cold water, istirring gently until cream has cooled.
Once cream starts to thicken, add vanilla extract.
Fold in whipped cream.
Note : charlotte should be ready to receive Bavarian cream, since gelatin will set completely in a matter of minutes.
