Chargrilled Vegetables with Pesto Recipe
Ingredients
| 1 capsicum (pepper), cut into pieces | ||
| 1 eggplant (aubergine), cut into slices | ||
| Red onions | 2 , quartered | |
| 2 zucchini/courgette, sliced lengthwise | ||
| Sweet potato | 1 Small, thinly sliced | |
| Olive oil | ||
| Pesto of choice | ||
Directions
1. Prepare vegetables for grilling.
2. Grease and heat a chargrill pan. Brush vegetable slices with a little olive oil and chargrill until golden brown and vegetables are cooked.
3. Serve with pesto or basil aioli.
