Ingredients

 1 capsicum (pepper), cut into pieces
 1 eggplant (aubergine), cut into slices
 Red onions2 , quartered
 2 zucchini/courgette, sliced lengthwise
 Sweet potato1 Small, thinly sliced
 Olive oil
 Pesto of choice

Directions

1. Prepare vegetables for grilling.
2. Grease and heat a chargrill pan. Brush vegetable slices with a little olive oil and chargrill until golden brown and vegetables are cooked.
3. Serve with pesto or basil aioli.
