Directions

Combine the flours and salt in a bowl; mix well and stir in butter and water to make a stiff dough; cover and let rest 1 hour.
Turn dough onto a lightly floured surface and knead until elastic.
Break off into 1-inch balls and roll out into very thin rounds.
(It will be necessary to exert great pressure to roll thin.) Bake on a hot, lightly greased griddle, over low heat, turning frequently, until lightly browned, 3 to 4 minutes.
