Ingredients

 Champagne1 1⁄2 Liter (2 bottles)
 Fish stock/Water5 Cup (80 tbs)
 Whole black peppercorns2 Teaspoon
 Mustard seeds2 Teaspoon
 Shallots4 Medium, sliced
 Fresh dill leaves6
 Lemon juice1⁄4 Cup (4 tbs)
 Salt4 Teaspoon
 Boneless salmon fillets4 Ounce, skin removed (8 pieces)
 Salmon caviar1 Teaspoon (for garnish)
For green apple slaw
 Green apples2 , cored and cut into juliennes
 Red onion1 Medium, sliced
 Sweet peppers2 Medium, seeded and sliced
 Jalapeno peppers2 , seeded and finely chopped (red / green variety)
 Finely chopped fresh dill2 Tablespoon
 Olive oil1⁄4 Cup (4 tbs)
 Lemon juice2 Tablespoon
 Lime2 , freshly juiced
 Salt To Taste
 Black pepper To Taste

Directions

MAKING
1. In a large sized skillet, combine all the ingredients apart from salmon. Mix well and bring to a boil.
2. Once boiled, reduce flame and simmer for 5 minutes.
3. Add salmon fillets, coat with poaching liquid and cover and cook for 12 to 15 minutes or till salmon is cooked.

FINALIZING
4. In a medium sized bowl, combine all the ingredients for green apple slaw and mix well.

SERVING
5 Place poached salmon on a presentation platter and serve topped with slaw, salmon caviar and fresh dill.
