Ingredients

 Champagne2 Bottle (1l)
 Fish stock/ Water- 5 cups
 Whole black peppercorns2 Teaspoon
 Mustard seeds2 Teaspoon
 Shallots- 4 medium no-€™s, sliced
 Dill leaves6
 Lemon juice1/4 Cup (16 tbs)
 Salt4 Teaspoon
 Boneless salmon fillets- 8 no-€™s (4 0z), skin removed
 Salmon caviar- for garnish
 Green apples- 2 no's, cored and cut into juliennes
 Red onion1 Medium (For green apple slaw)
 Sweet peppers- 2 medium no's, seeded and sliced
 Red/ Green Jalapeno peppers- 2 no's, seeded and finely chopped
 Dill2 Tablespoon, finely chopped (For green apple slaw)
 Olive oil1/4 Cup (16 tbs) (For green apple slaw)
 Lemon juice2 Tablespoon (For green apple slaw)
 Lime- 2 no's, freshly squeezed
 Salt1 To taste (For green apple slaw)
 Black pepper1 To taste (For green apple slaw)

Directions

MAKING
1. In a large sized skillet, combine all the ingredients apart from salmon. Mix well and bring to a boil.
2. Once boiled, reduce flame and simmer for 5 minutes.
3. Add salmon fillets, coat with poaching liquid and cover and cook for 12 to 15 minutes or till salmon is cooked.

FINALIZING
4. In a medium sized bowl, combine all the ingredients for green apple slaw and mix well.

SERVING
5 Place poached salmon on a presentation platter and serve topped with slaw, salmon caviar and fresh dill.
