Ingredients

 1 pound fillet of sole or similar fish, cut into bite-size pieces
 Lime juice1/4 Cup (16 tbs)
 1 large tomato, peeled, seeded and diced
 1 large red onion, coarsely chopped
 2 2-ounce cans chopped jalapeno peppers
 Olive oil1/4 Cup (16 tbs)
 1/4 cup minced fresh parsley or cilantro
 Ground pepper1 To taste
 Salt To Taste

Directions

Sprinkle fish with lime juice and marinate in refrigerator for 8 to 12 hours or overnight, turning occasionally.
Drain and reserve juice.
Combine fish with all remaining ingredients and sprinkle with reserved juice.
Serve chilled.
