Seafood Ceviche Recipe
Ingredients
| 1 pound fillet of sole or similar fish, cut into bite-size pieces | ||
| Lime juice | 1/4 Cup (16 tbs) | |
| 1 large tomato, peeled, seeded and diced | ||
| 1 large red onion, coarsely chopped | ||
| 2 2-ounce cans chopped jalapeno peppers | ||
| Olive oil | 1/4 Cup (16 tbs) | |
| 1/4 cup minced fresh parsley or cilantro | ||
| Ground pepper | 1 To taste | |
| Salt | To Taste | |
Directions
Sprinkle fish with lime juice and marinate in refrigerator for 8 to 12 hours or overnight, turning occasionally.
Drain and reserve juice.
Combine fish with all remaining ingredients and sprinkle with reserved juice.
Serve chilled.
