Cereal Oat Bran Muffins Recipe

Ingredients

 
2 Cups Unbleached Flour
 
1 Tsp. Salt
 
2 Tbsp. Baking Powder
 
1 1/2 Tsp. Soda
 
1 Tsp. Cinnamon
 
1 Cup Pecans, Chopped
 
2 Cups Buttermilk
 
1/3 Cup Safflower Oil or Margarine, Melted
 
3 Egg Whites
 
1/2 Cup Brown Sugar
 
2 Cups Oat Bran Cereal Any Kind
 
1 Cup Oat Bran

Directions

Combine the flour, salt, baking powder, soda, cinnamon and pecans in a large bowl.
Stir until well mixed.
In a smaller bowl combine the buttermilk, oil, egg whites, sugar and whisk until sugar is dissolved.
Then add the oat bran cereal and oat bran.
Stir until well mixed.
Let stand about five minutes so the buttermilk will begin to soak up the cereal and oat bran.
Pour the above mixture into the flour, salt, baking powder, soda, cinnamon and pecan mixture.
Blend for 10 seconds until dry ingredients are well blended into the moisture.
Spoon into muffin pans which have been sprayed with a non-stick solution.
It is best to always put the nuts into the flour mixture so they will be coated with the dry ingredients.
This prevents them from all settling to the bottom of the muffin pans.
Bake at 375 degrees 25 to 28 minutes
