Fried Chinese Triangles Recipe

Ingredients
20 wonton wrappers
1 beaten egg white oil, for deep-frying
Filling
1/4 lb (110 g) chicken, finely chopped
1/4 lb (110 g) fish fillets, finely chopped
1/2 stalk celery, finely chopped
1 small green onion, finely chopped
2 tsp (10 ml) light soy sauce
1/4 tsp (1 ml) salt
Sweet and Sour Sauce
3/4 cup (185 ml) water
1/2 cup (125 ml) sugar
1/2 cup (125 ml) white vinegar
1 tbsp (15 ml) tomato catsup
1 tbsp (15 ml) cornstarch
Directions
1 Combine filling ingredients.
2 Place 1 tsp (5 ml) of mixture on each wonton wrapper. Brush edges lightly with egg white. Fold to form a triangle. Place a dab of egg white on the left front corner of triangle. Join the front of the left to the back of the right side of triangle to form a swallow.
3 Deep-fry in oil to cover until golden.
